What is Pinsa?

Pinsa is a specialty Italian cuisine consisting of a mix of flours, a high percentage of water with a reduced amount of fat.  Pinsa is truly a healthy alternative to traditional pizza.  Although it looks simple, in reality the Pinsa dough leavening process takes days.  Furthermore, our chefs carefully hand stretch the crust to give it it’s shape and bubbles which naturally occur during the aging process. What this results in, is a highly digestible product that is crunchy on the outside and soft inside.


Pinsa dough is made from a special blend of flour that contains Italian 00 flour along with rice and soy flour. For every 10 cups of this special flour blend, we add 8 cups of water, and age the dough for 2-3 days. The result is a bubbly and elastic dough that creates a unique soft, frothy, and ultralight eating experience with a very crispy base. There is nothing like it!

To understand the origins of Pinsa, you must understand the dough. The word Pinsa, refers to “dough being pushed by hand.” Pinsa is the oldest form of pizza and was a Roman street food enjoyed by the working class of Rome for centuries. Pinsa is unique because it consists of 3 types of flour. Wheat, rice and soy flours are finely processed to obtain a mixture with low gluten content and a high level of water without adding animal fats!

Slow Leavening- Light & digestible!

It takes a minimum of 24 hours but for Pinsa to perform at it maximum capacity, the leavening period is closer to 96 hours. Patience is needed, but it is only in this way that it is possible to achieve and obtain a light and very digestible Pinsa.

The Shape- Hands in the dough!

The pinsa is famous for its narrow and oval shape, which favors the correct escape of moisture during cooking. The wavy bubbly surface is obtained by the pressure of the fingers pushing into the dough. The alveoli, allow you to retain the air in the mixture and make the Pinsa crispy and very digestible!

Once rolled out, our bases are immediately cooked briefly to block the leavening and maturation of the dough at the perfect time. We lovingly place delicious and high end ingredients on the Pinsa so you can put it in your oven at home and have a delicious dinner in 6-8 minutes!

We will send you a list of food retailers that either carry it in the deli or freezer section. Pinsa is new to the United States, so it may take a while for you to find this in your area. We are working hard to get it to you! Yes!  We want everyone to experience Pinsa!   Each Pinsa is $8.50. There are 7 Pinsas to a case.  Shipping is $10 per order in Washington, Oregon and Idaho.  Check with us if you are outside the area.  Shipping usually takes 1-2 days.  Your Pinsa(s) will arrive with ice packs, however it is likely the crust will be thawed.  Don’t worry, place them back in your freezer.  The Pinsa crust is very resilient and will perform great when you are ready to enjoy.

We understand dietary preferences. We offer some gluten-free crusts for our Pinsa’s.  Please inquire for more information as this is an area on which we are working.

We prioritize quality first. We source ingredients locally whenever possible, however a large majority of our ingredients originate in Italy
